Started by making a miniWSM, which I was able to smoke a lot of things including wings, and even a brisket, by making a "rack" that I could drape the brisket over in order to fit. Built a UDS with Weber lid and used that for awhile. I've also built UDS' for relatives. I now have a Yoder YS640s comp cart pellet smoker that I'm enjoying. Picked up an extra fireboard thermometer and competition probes These things are great, and I highly recommend them! I also have a 26" Weber kettle, a Jumbo Joe, and a Weber Spirit II gas grill. Used the extra fireboard and probes to "map" temps in the Yoder. I also use the fireboard to monitor cooks in the Weber grills.
I am a current KCBS member, and have judged a few years back at the American Royal Open. Cooking is my way of relaxing, so I have not attempted to compete.
I seem to prefer cooking beef, but enjoy spareribs, thick steaks, etc.
