      I used to wrap but have gone to the unwrapped side
      Rely on the toothpick rather than bend test and the ol’ ya just know they’re done

        Depends on what type of ribs and what tenderness I’m shooting for weather I wrap or not.

          I wrap in foil when the ribs get to a "deep reddish brown" ( that’s Aaron Franklin ). Wrapping in foil, not pink butcher paper, allows me to add brown sugar, honey, and butter which results in a sweet, tasty rib.
