    Welcome to the Pit from Alabama. On the BBQ front, I've gone from smoking on an old offset to smoking on my Weber Performer (22") with a SNS most of the time, using a Party Q to control the temp on long overnight cooks. The Weber is just so much more fuel efficient and hands off than my old offset, and after doing this for 30+ years, I've gotten old and lazy!

    If I want to use the SNS for 325 to 350 degree cooks on my 22" kettle with the standard sized SNS, I typically light a half chimney of charcoal, fill the basket up about halfway with unlit charcoal, then dump the lit on top. Running with all vents wide open, I get about 350 degrees for a 2-3 hour cook. I do that for turkey or chicken mostly.

    The setup for 325 or so is just a bit different from the low and slow setup, with the main trick being you have to start with more lit charcoal, and you will be refueling more often.

      Thanks for this. Similar to the SNS manual. Issue is that I’m on a 26” and SNS XL. More volume and distance from the coals. Think I might have to start with 3/4 full lit charcoal or something like that. Thoughts?

      BlueDun sounds reasonable, since the SNS XL holds more coals, and you are heating more space.
