Greetings from Houston. I have a lot of experience grilling and smoking on my Weber kettle. I had a 22†Weber Smokey Mountain and a drum smoker that I built. I have been simplifying things and am back to my 22†kettle only. Appreciate all the advice and recipes on this site.

Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.
