I’m happy to find this site and the active posts. I’ve been cooking outside for decades, and I don’t think I’ve ever cooked a holiday turkey in an oven. Still, I’ve never really gotten serious and looked at the nuances of getting great barbecue. I’ve had a Weber Performer for almost 10 years and thought about a pellet smoker until I found Amazing Ribs. I just added an SNS, but I’ve used indirect with the stock Weber charcoal holders.
This past year I’ve done more sous vide, first in my home brew kettle, now in my instant pot.
We’re RVers, and we travel with a Weber Q1200, so the sous vide works great.
My avatar shows my grill and my electric brew pot. Been home brewing for almost 30 years, and now spending more time with that hobby as well.
