    indeed, what I am very curious about is the way you prepare your meat on the bbq, and especially times, temperatures, whether or not in the aluminum foil, which spice mixtures in which quantities.

    I have already put together some nice rubs, but experimentation remains fun

    Ganesh2 Is horse meat still a big seller over there?
    In the 90’s I worked for KLM in they’re cargo shed in Toronto airport
    Back then 4 flts a week usually had 7 pallets of horse meat on them to AMS
    Demand then was thru the roof

    Afgelopen dinsdag had ze op 160 C bereidt, indirect met een schaaltje appelsap en appelazijn en had ze gaar in 2 1/4 uur lekker sappig en mals en toch een lekkere bite zonder ingeboet te hebben op droog stukje vlees.

    Vandaag trouwens weer bezig met nieuw experiment, had ik ergens op het www gezien. Eerst een pekelbad maken, daar de spareribs voor 2 dagen in pekelen, daarna droog deppen kruiden er op, in kookzakken vacuüm verpakken en dan op 80 C voor 10 uur
