It's taken awhile to actually post, but I'd like to start by saying thanks for the wealth of info on your site! I smoked for years on my gas weber before buying a Smoke vault,and have used your site exclusively with great results. I've read your info on the whole "packer" brisket, and was able to pick up a nice prime packer at Costco, but it would be really helpful to see a video of how to break it down so that I have more even cuts ( I am going to need to cut it to fit anyway) would you know of a good one? it's not my first brisket, I have had great results with the HOF's.

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks.
