Hi, I’m new to the pit. I live in the Carolinas but I lived in Texas, GA, Seattle. I picked up tips and tricks from all over. I like how technical Meatheads recipes are. I cure my own meats. Bacon Pastrami etc. i learned how from his amazing ribs site. Cooking is my hobby. It helps me I forget about work for while. I enjoy Sous vide technique for cooking fat steaks. Then sear them on a super hot grill. I haven’t had the courage to do big meats like pot roasts in the Sous vide. I’m too chicken to leave them in for three days. My main cooker is a Memphis pro 430. I like it because I can do direct and indirect cooking. It makes me feel lazy. I Set it and forget it. My backup is a Lynx gas grill. It’s is a awesome cooker but I really enjoy the Memphis. It’s so easy. My latest Favorite is cooking paella outside on the Memphis. It is really good and looks beautiful. I’ll attach a pic. I look forward to learning tips of the trade from you all.
