I can only comment with SOME authority on the bread. I'm primarily a sourdough baker. Favorite baking books: Forkish's "Flour, Water, Salt, Yeast"; Hamelman's "Bread"; and Fromartz' "In Search of the Perfect Loaf". I do have to mention Craig Ponsford's incredibly high hydration ciabtta :-)
