      Welcome to La Crosse Wi. I am new at all of this, but, I certainly appreciate the methods you talk about. I am big fan of the Food Lab & Kenji, Reading how Aaron Franklin feels about bbq, makes me want to make good bbq I have the books as well. big fan. I am of course a fan of Meathead, I am here. Also as mentioned, I am big fan of baking bread, Have 2 loaves happening today, plus some Food Lab cooking today. Welcome! You will enjoy it here. This place is full of amazing cooks.

        I can only comment with SOME authority on the bread. I'm primarily a sourdough baker. Favorite baking books: Forkish's "Flour, Water, Salt, Yeast"; Hamelman's "Bread"; and Fromartz' "In Search of the Perfect Loaf". I do have to mention Craig Ponsford's incredibly high hydration ciabtta :-)
