      Somethings I need to learn is to smoke with tropical log. This will determine what kind of smoker I will buy. I would like to get the LSG rig but I could not get Oak, Pecan etc here in Thailand. We have Longan, Lychee may be apple but no Oak. I could go another way by getting a pellet smoker which I could easily get chicory, apple, pecan pellet here. Any thought?

        Pellets might be expensive to source in Thailand. I suggest you work with the woods that you have. Any hard wood should work, research the ones that are most like oak or pecan.

              Here we go for Chieng Mai Chicken.

              2Kg of Spring ( young ) chickens, say 1 kg each spatched cocked them.
              For marinate

              4 shallots
              10 cloves of garlic
              3 lemon grass ( cut to small pieces )
              2 10inch pandan leaves
              5 Cirantro ( coriander ) roots
              2 table spoon of oyster sauce
              1.5 table spoon of light soy sauce
              1 Teaspoon of salt
              1-2 Teaspoon of ground white pepper
              100 ml of whole milk

              Put all of them in a blender, marinate the chicken for 2 hr. in a fridge.

              Then grill.

                  Sawasdee kap! My wife is Thai and we go there every couple of years! Welcome to the Pit! One of the things I've noticed in Thailand is that the quality of beef to be had there is much different than in the US and Europe. Also, in my time in Bangkok, Ayuthaya, and Muak Lek I've noticed that there are absolutely no American style BBQ restaurants to be seen. When we went in June, I actually mentioned this as a business opportunity to my wife! I think it's a great idea you have!

                    Thanks for your support, about the meat I think I will import them from Australia. In the past imported meat are very expensive but now we have free trade agreement with Aussy, the import duty is quite low and now import meat is affordable. Also there are a number of cooperatives in Thailand raise the 62% Angus and 38% Braman breed in Thailand. If you come by this way, give me a shout.
