I joined recent myself..great site...make beef plate ribs about ounce a month...remove fat,rub with lousiana or crystal hot sauce..kosher salt crucshed black pepper..
i do make a sauce always someone in need..i like them as they come off pit...
render the fat...need a 1/4 cup with water dripping in pan below rib cook..i run it thru a fat seperatior
3rd of a onion diced
4 cloves garlic..rough chop
1 cup light brown sugar
1 cup apple cider vingar
2 cups organic catsup
1 tsp mustard powder
1 tsp sea salt
1 tsp pepper coarse
4 dashes Worcestershire sauce
1 tsp smoked paprika
Heat in sauce pan till blended..add sugar and melt in stir often
this is from arron Franklin...and it is tastey ...
i always make some sort of sauce ...never the same i am sure..add and change as i go...always trying to find the one...only one i can make blind is Alabama White Sauce ..for chicken ..billy
