Hung out with Meathead and few of the other pitmasters at the Sous Vide Summit this past weekend and figured I'd sign up and say hello! I'm Pete, but Meathead knows me as "Pineapple." I live in Pottstown, PA, which is about an hour northwest of Philadelphia.
I'm not sure what things are celebrated vs. shunned in this forum, but I'll risk being ostracized by listing that I've got a GMG Jim Bowie pellet smoker and I love using it for smoking foods. All of the smoked foods I make at this point are sous vide'd at least one of the steps when preparing.
Hope I have the opportunity to learn some fun stuff with the fellows of the group.
