OK, here is the scenario. I'm a Central Texas Smoker moving to another country - Guyana to be specific. I'm taking my PBC but can't take my offset (too heavy). So here is the deal. The pork is OK in Guyana and I'll bring in the brisket from Texas. Contracting a guy to build be an offset but where do I start? Guyana has many hardwoods from which to choose. Sooooo - how do you start from scratch when Post Oak, Hickory, Fruit woods, etc. are not available? Any thoughts appreciated.
That's Crazy!! I just joined the forum and, I am beginning a 4 week on/ 4 week off rotation there soon! I was actually thinking i would get a PK360 shipped down there to cook on while I'm there. As far as wood goes i was thinking wood chunks, since i was planning on a smaller cooking and, i'll be rotating back and forth...
is it possible to get some from Brazil?

Wood is in abundance down here. Heck you are living near the words largest rainforest and worried about wood? Half the fun is testing new things. Wood is least of your concerns. Overcome and adapt to your new surroundings.
