Absolute carnivore, here. Recently bought a PK360 to supplement a Weber Q gas grill and a gas upright smoker, so I'm still discovering the alchemy of cooking with charcoal and looking forward to learning lots here. Long time fan of sous-vide. Already done pulled pork shoulder, beef ribs and lamb ribs sous-vide and then on the PK360 and am thrilled with even those beginner's results.

Welcome my friend from down under have a good friend in Noosa I hope to visit one day. I live in the mountains of North Carolina and smoke and grill everything. Sounds like you have everything to put out some top notch BBQ. I have been doing it for 40 years started with a Weber kettle, had some top notch rigs till now and have retired and reduced my grills to another Weber kettle and a gasser since there are only two of us.
