Hello, I'm new to the pit side of Amazing Ribs, but have been reading recipes for a few years. About 5 years ago, I got tired of the Cheap gas grills you get at the big box stores. They were too small and uncontrollable, although I did manage to cook pork shoulders on them that turned out good enough to impress my family . . . Anyway, I finally broke down and bought a patio cooker from BQ Grills in Elm City, NC. I got it with a smoke tray, so I could add a little smoke flavor and have been enjoying it ever since. My wife and I have settled on Sassafras pellets as our favorite, and I have "engineered" an offset smoker for better heat control at the low end. It looks pretty funny when I cook two pork chops on it, but not with 4 pork shoulders.
