    Hello From Long Island

    This site is awesome. I have been grilling for awhile but mostly on propane. I saw a friend on Facebook that purchased a pellet smoker and was interested. Made the mistake, or not I suppose, of researching them on the internet. For the next two weeks all of my Facebook and internet ads were for pellet smokers. Two weeks later I pulled the trigger and picked up a CampChef ZG at Dick's and haven't looked back. I started out with a whole chicken and it came out awesome. I found this site with the literature that came with the grill and shortly thereafter ordered the book Meathead. I have to say I wasn't expecting all that much but the book is awesome. It speaks to the food science and I wasn't expecting that at all. I was wandering through Costco on Friday and decided to get a pork shoulder. Followed Meathead to the letter with a dry brine, the Memphis Dust rub and no crutch. It took 12 hours but it was worth every minute, My dog was running in circles as I pulled it. Really looking forward to learning more!

        Now add yourself a smoke tube, LizzQ makes a good one that doesn't roll, and you will get that serious smoke flavor and bark that stick burning folks get. If you want even more smoke, light both ends of it for super thick smoke. Use a cheap heat gun for lighting from Harbour Freight and you will be in business. Pack pellets tightly in the tube and you will get about three hours of double smoke or five plus hours of smoke from lighting just one end.

          From my experience, the Costco pork shoulder is excellent. Did 17 pounder last weekend yielding 10 pounds of great pulled pork. i only cut a few ounces of fat off before cookin as they don't hide a bunch of fat.
