Hi y'all,
New member from just south of Nashville checking in. I've been reading the site for about a year since I started thinking about trading in my big, reliable old gasser in for something fancier that can add real flavor to what I cook. I can't thank the crew at this site enough for all the great reviews and info. Whenever I do finally pull the trigger on a new grill, my pick will have been educated by Max Good and the rest of the AmazingRibs.com team. Paying close attention now to all of y'all posting experiences and pics of your own stuff. It's making me smarter (but also hungrier).
I've had a WSM for a few years and enjoy smoking in it, but it's just too hard to use for regular grilling. Instead of pushing my gasser off the side of the deck and replacing it with a big expensive non-gas rig, after reading this forum for a while I just decided to get a Weber kettle, drop a SnS into it, and spend a while learning the basics. Based on the first couple of cooks, I have a lot to learn, but it's not hopeless!
As a native Texan transplant, my ultimate goal is perfect brisket, but I also want to learn the other stuff.
I appreciate all that y'all post about your own cooks and techniques. It helps.
