I am very excited to join this group and look forward to learning from everyone! Although I am experienced in the kitchen, I am not as much with my grill. We currently have an MHP WNK 4 gas grill and I want to learn how to maximize it's versatility as well as learn more about the nuances of grilling. I would also like to try my hand at using my grill for smoking. As much as the smoker's I see out there are calling my name, I really want to master my grill first. Thank you for welcoming me! Emily

Welcome to the pit ebysea! You can do low 'n slow smoking on a gasser just fine, I've done it for years. It's very convenient. I always add a water pan next to my aluminum pan with wood chips.
