Got plenty tips on lighting and what not.....
I like to hang mine 5-6 hours. Then lay on the grate to bark up, fat cap first, if it needs it. Then wrap once it is dark enough. Once they get probe tender, put to rest of a couple hours.

My name is Dave and I have been Qing for about 50 years and I am still learning, I have 3 Weber Genesis grills that I use for cooking with friends, a Weber Q gas grill and a Weber Kettle grill, an old fashion side fire box smoker that I am giving away after reading the reviews on it and realizing why my smoked food was drying out, Joined a little while ago after using the site for a couple of months, cooked a prime rib using the MH method of no bones or fat cap, put on my old style 3 burner Weber Gensis on a rotisserie, best roast any of my friends or family ever had. Also made the gravy and garlic mashed potatoes per MH, Awesome stuff, Wife bought me a brisket from Kansas City Creekstone for Christmas and my Pit Barrel Cooker just was delivered, Got another brisket from around here to try it out on, don't want to screw up the KC beef. Will post pic of brisket as it happens, any thoughts on doing the brisket on the PBC, I watched the videoTags: None
