Finally decided to join after a couple of years lurking...........I am new to smoking and do so on a Weber 18", also have a charcoal Weber performer and a Genesis 330 Gas. After a lot of years and many burnt cooks and reading I have learned that slow is the way to go. That might be a product of age though. Will be retiring in a couple of months and plan on a lot of experimentation with the grill and the smoker.
Looking forward to learning more about the "art" of BBQ.
