Today is some pork belly strips smoked then seared.... recipe i found.

this was a back up to some tough looking beef ribs that I found here and are still cooking.

Problem getting good meat here . we get the cheapest grade of brisket here and turned into salted beef normally.
The pacific islands tends to be the dumping from NZ to sell the meat that can not be sold as export or NZ consumer!
