Just saying hello! I've been honing my skills following the Meathead doctrine via the book with success, so far! I'm new this year to smoking, but have gotten a lot of compliments by leaning on my "smoking bible". I grew up around KC bbq, lived in SC and Texas too, so I've tried many varieties.
