Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

Welcome to the Pit from New York City.
Those allergies sound awful. I am not in any way a medical professional but I am a fellow food allergy parent. Have you heard about a relatively new treatment called Oral Immunotherapy or OIT? If not, it's worth searching the internet to see if any allergists are doing it in your area.
Essentially OIT is giving tiny doses of the allergic food in increasing quantities over many months. My son has been undergoing this treatment at Mount Sinai Hospital in New a York City and as of this morning he able to eat four peanuts after having had reactions to trace amount of peanuts only six months ago.
If this is isomething that is available to you I can't speak highly enough of the results we have had and my undertstabding is that our experience is the norm.
