    Hello from Toronto

    Hi all.
    I have been grilling and smoking for several years now on a Weber Kettle with the Smokenator. Last summer I bought an offset on Kijiji and got a few good sessions in with pulled pork and ribs. This year I have been recovering from some surgery and haven't gotten any cooks in yet or spent much time outside. I need to work on my fire management. Last year I was trying all hardwood logs and had a lot of temp yo-yoing going on. I made a charcoal box and am going to try charcoal/minion method with wood chunks instead. Today I'm planning to clean up the backyard and the smoker and tomorrow I'm gonna do a pork shoulder. I have a brisket in the freezer that I would like to get to soon as well. Got to nail my fire management and temp control before I do the brisket though.

    I'm also interested in home butchering and am thinking about doing up a lamb soon.

                        Please, don't give up on burnin' sticks, until ya' have exhausted all other available resources, here...
                        An all charcoal fire, in an' offset, will cook proper food, given due diligence...
                        But yer (IMHO) missin' out on th' best of stickburnin'
