    Westchester County, NY in the house

    Greetings from the suburbs of New York City. Been poking around this website for a while and then finally joined a few weeks ago. Have a gas weber, an 18" WSM and an Anova sous vide circulator. With two little kids, I don't have a ton of time to spend with the smoker and use the Anova when I can to help with the timing.

    I recently just finished a pastrami that I cured for a week, cooked sous vide, smoked for 2-3 hours and then steamed. Lots of steps but so worth it.

    Other personal favorite items for smoking are chicken wings and hot italian sausages. Next up I'm thinking of doing some sort of quasi-smoked/reverse seared tri tip.

          Here are my pastrami photos. I used a combination of Amazing Ribs and Serious Eats as inspiration. Used a roughly 8lb brisket from costco. Up here they only sell flats but most half a decent piece of the point still attached

          First pic is the post-sous vide pre-smoked. Rub is equal parts fresh ground coriander and black pepper applied post-sous vide and refrigerated overnight.
          Second pic is post-smoke and post steam. After smoking, I steamed one half and then sliced. Second half was put in the fridge
          Third pic is post from the second half. I sliced while cold and then steamed the slices.
          Fourth pic is the sandwich. Club roll with mustard and sour pickles on the side (store bought but will hopefully get around to fermenting my own sour pickles one day). Would've preferred rye but didn't have any in the house

              Welcome aboard shify from Rockland County. What town are you in? I'm actually in Hillburn right next to Suffern. If you stay active here you're gonna have a lot of fun.

              shify great minds think alike. I'm new to SV and pastrami and andouille are on my list as well as wings. I've done pastramis and Cornedbeff plenty but not with the SV. Mind sharing your recipe for the cure? PM is ok too.
