I am excited about what I'm learning here, a whole new world for me. I have two Weber's, one gas, and after learning about sous vide, am raring to go. (No pun) After finding this site, I first bought a Smoke n Sear and two probe thermometer, and then a sous vide circulator. My first try was a cheap chuck roast which amazed me with it's juicy tenderness. I then tried salmon and chicken, which need some work. Then I tried St Iouis style ribs with Memphis rub, which was a success. Afterward, I thought about entering a contest! I'm a tightwad, so appreciate the saving on charcoal from sous vide, and the opportunity to learn. Learning how to use my kettle as a smoker, and how to regulate the temperature was easy with Meathead's instructions.
These skills will be used to fill out our social life, inviting friends over for dinner, and making new ones, which makes me grin.
