    Hello from St. Louis

    Just wanted to say Hi from St. Louis, Missouri. I've been the cook in the family since I've been married but just started to get into long cooks about five years ago. My first long cook was a full brisket on an unmodified Weber Kettle. Man, was that a pain but it turned out ok. I bought a Camp Chef Smoke Vault last year and used it for pulled pork, ribs, turkeys, salmon and bacon. Lots of bacon. I have a full brisket wet aging in the fridge right now to use in a couple of weeks. For shorter cooks I use a 26" Weber Kettle, two or three times a week during the summer. I am a high school science teacher and a coach and its hard to find the time to cook outside during the school year.
