                Welcome from Scotland! Just completed my first Brisket this past weekend. It was great. Make sure and read Meatheads post on Texas Brisket, it's invaluable if you are preparing for your first attempt.

                The correct fuel is key for the cook. Mine was Brewdogs Punk IPA.
