Hello everyone. I’ve been visiting the site for a little over three years and a pit member for about a year. I’ve learned almost everything about BBQ from the site and Meathead’s book. It also began my journey into a more technical view of cooking and I got into the Food Lab and Chefsteps through Meathead. My main interest now is combining sous vide with smoking. I am very happy that the site supports this and that Meathead seems to be focusing on this going into 2017.
My equipment is fairly basic – Weber spirit grill with GrillGrates, an 18’’ Weber Smokey Mountain and an Anova Sous Vide wand. But the combination produces great results.
I smoke/grill beef, turkey, chicken and (occasionally) lamb. I cook fish and vegetables on the grill.
