    I have been a fan of AmazingRibs for several years. It is my go to source for anything related to outdoor cooking. I have a Primo large oval ceramic cooker almost entirely reserved for beef or pork. My Weber is my fish or hamburger grill. Both have been modified to accept a thermostatic controlled blower. Equipment I have bought through links at AmazingRibs include: 1) fold-up instant reading internal thermometer; 2) the thermostatic controlled blower (forgotten the name); 3) the accessory for the Weber to isolate the coals to a confined area; and 4) Grill Grates. I also have a gas grill for searing and a griddle to fit. My latest interest is to pursue adventures in sous vide cooking technique.

    Welcome. I almost spent a week in Hammond a year ago. Travel orders changed so I stayed in east Texas.

    Gotta love PID controllers when it comes to cooking and sleeping.

        I love Hammond! Go there every March for the BBQ contest. Eat at Topela, Cate Street for the Big Easy Roll and the best ice cream custard in the world! Alack Culinary, LeBlanc Groceries...I could go on but you live there! Lucky!!! Welcome to the Pit!
