Welcome, Don. I, too, am a new member and am really enjoying the site. I'm getting ready to smoke my first turkey, and I've got to admit I'm a little nervous, but I am excited to try it!
There are not enough words in my brain or feelings in my heart to express my gratitude to all of you brave and courageous Vets, so I will simply say thank you.
Thank you Theresa, and have fun with the turkey. I got started before Thanksgiving and ended up smoking 5 turkeys in the span of about 6 days. I did wet brine for all of them, and I spatchcocked the last one-highly recommend this method. Next time I'll try a dry brine.
