    Roasting a parted turkey (just under 18#s) on my well modified COS Oklahoma Joe Longhorn with post oak.

        How it looks midway to done. I brined it whole for eight hours in a simple salt and sugar solution with allspice and thyme and bay leaves. Dried it off, separated the parts, smeared them Click image for larger version

        with peanut oil and a bit of black pepper. Kinda pale but in about an hour I expect all to look more like that back to the left.

          Tomorrow, I am headed early to my local Central Market (upscale part of HEB grocers) to see if they have fresh organic turkeys for sale at super low prices as they did last year. If so I will buy a couple to smoke and freeze.

                    LOL when I first read your post I thought you said smoking a pardoned turkey? I was thinking Don't think that word means what he thinks it means. Then I focused a little (I need to do that more) and realized it was "parted". Wonderful looking bird!! Welcome to the pit!!
