I just recently joined the forum after being a lurker for the past couple of years.
i have been grilling and cooking for years, but just added a GMG pellet grill to my repertoire 2 years ago and got bit by the bug.
After moving to NC, and having had built some confidence in my skills, I added a Weber 22" kettle to the toolbox, and am learning the nuances of low and slow on the charcoal. My first go at pulled butts was a success, and I have a new friend with this kettle.
For Thanksgiving, we are visiting the in laws in Central NY, and I had to smoke the bird again this year. I started 2 years ago, and the better half has now mandated my technique every year. Since the in laws only have an old gas grill, I bought them a MES digital 30, and have the bird chilling in the Apple wood smoke since this morning.
