For the money I am about to spend. MyFellowMerkins from Central NC. Got a Brinkmann Gourmet charcoal smoker on a whim last Halloween (because I didn't know how to buy a smoker) , made terrible ribs twice, said forget that noise, someone mentioned I check out this website before I give up. Now I'm a member, modding my smoker, making delicious ribs and sauces and realizing I've been grilling steaks all wrong my entire life.
The Path .... winding and interesting for sure. I am about to add top and bottom vents to my smoker, a better thermometer, a bottom rack for charcoal to elevate it, a seal around the lid to stop leakage, and maybe one day in the future a port for a remote meat thermometer, but I'm not going crazy yet with that one extra hole.
I've now got my own sauce recipe that I made by playing around with a few I found here and modifying to my taste, I now have a strong opinion on wood vs. charcoal vs. gas and smoking salmon is my next step.
There is a processor/butcher 20 minutes from me that only serves local farms. They also have a storefront, I can get a full rack of spare ribs for $10, baby back for $12, a tri-tip or brisket for half what the grocery stores charge. Limited hours, but you do what you can!
If I keep this up, my answer when asked why I stopped smoking meats will be "I got tired of building things."
