Hi All, from Dave in Boerne (pronounced Bernie) TX which is just north of San Antonio. Mailing address is Boerne but I'm actually closer to Leon Springs which is the home of the original Rudy's BBQ and the original Romano's Macaroni Grill.
Started cooking in the early 80's working in restaurants while I was in high school. I haven'y gotten paid to cook since but I've always had a grill and/or a smoker. Over the last 25 years we've lived in places where knowing how to BBQ was a necessity: Kingsland, GA (just above Jax, FL), Memphis, Charlotte and now Texas, so I've gotten exposed to a lot of different styles, techniques, sauces, etc. Texas is about brisket whereas everywhere else I've lived it's about the butt. I'm good with all of it.
I don't currently have a smoker, I'm trying to make do with a 42" DCS NG grill and pellet tubes and baskets. My next smoker will be a ceramic egg of some sort.
This is a great site. I really appreciate all the work that goes into it.
