I've been grilling for years...and occasionally smoked on my Weber Summit Platinum. But I recently decided to do some "real" smoking and go all in. By the time I get back from working across the country my new toy should be here: a WSM 22.5 and I can'​t wait! Probably bigger than I will need most of the time...but I can't add space to the smaller if I do need it. Thus my justification in a nutshell.
I was trained as a chef some years ago but that is not my current occupation. But I still love to cook. And still fully understand that I don't know it all and have a lot to learn. And that's why I'm here!
