    Hi from Plano, TX

    Just joined today and I am half way through smoking my first ever brisket on a WSM. I wish I had watched the Harry Soo video before I started - I learned more watching that one video than the other 20 I watched on Youtube over the last week! But I'll let you know how my brisket turns out. Anyway, thanks for a great site. I've got a lot of catching up to do.

    Let that brisket get dark dark dark (if you have time)...more bark the better.

      Welcome to the Pit! We can't wait to see the results. I moved from Louisiana where pork butt is cheap and abundant to Texas where beef is king, more abundant and lower priced than in Louisiana, so I will be doing more beef and in particular brisket. Other than a flat, it has been years and years since I did a whole brisket. This will be new territoriy for me. Everyone has a method, so I'll be looking for one to use on my first brisket. I'm all ears for suggestions. I'll start with Harry Soo's video. Anyone have something to add? Go for sliced or shredded?

        Guest I'll do the triple treatment on each one. Better parts of the flat get sliced, drier parts gets chopped with the really fatty point pieces, not too fat point pieces get the burnt end treatment. Do burnt ends one time, they WILL ASK FOR IT AGAIN AND AGAIN AND

                Just joined after perusing the site for a coulpe of months. I live in Tulsa, home of Hasty-Bake, and several local restaurants that use HB exclusively for smoking. I use the Suburban, as well as a Weber Performer with Slow n Sear. Trying to learn all I can, and I will say that this is the best site I've found for solid reliable info.
