    Hello from Perth Amboy, NJ!

    Hello everyone! Mark here. My girlfriend gave me a Weber Smokey Mountain Smoker for Christmas and I'm learning how to use it. Best advice I was given from my friend Adam was this website. I read through some of the articles and did my first smoke...baby back ribs using the "Last Meal Ribs: The Best Barbecue Ribs You've Ever Tasted!" recipe. They came out great for a first timer and my friends who ate them didn't spit them out and still talk with me, so I guess all went well! Seriously, they came out great and I was very happy as a first time smoker/BBQ/griller (whatever you call it). I've been using a grill for 30+ years...a hack really - typical back yard BBQ items, but never smoking and what I see here as real BBQ.

    This weekend I'm doing a beef brisket and I have been reading up on the Texas Style recipe and the Texas Crutch. I'm picking up my brisket tonight. We will see how things turn out, but I have to say I feel confident to do this after reading these two articles.

    I can't wait to learn from all of you!

                Thanks for the advice! I have an igrill2, so a meat probe and ambient probe on the grate. Will use the 3rd as an ambient one on the bottom rack

              Howdy. The Weber Smokey Mountain is a great smoker. As more or less a rookie I can tell you that the learning curve is quick. Sounds like you're off to a great start. I found that smoking chickens was a great way to learn the WSM. They are cheap and tasty.
