I enjoy offset stick burners. I guess some use offset smokers like building & maintenance of the firebox. Offset smokers have been known to produce the best BBQ meat. As you might know ALL top quality BBQ joints are using large pits and those are nothing more than HUGE offset smokers. The pits have a LARGE firebox on the end and work on the same principal as an offset smokers. The pit Rudy’s BBQ restaurants uses work on the same concept as the offset smokers just in a LARGE cooking chamber.
