    New Mexico Nooby

    Howdy! I'm Tom from Las Vegas, New Mexico (the original Las Vegas - no casinos!) at 6400feet in elevation. As I wrote in the bio section, I've been pretty much your typical backyard weekend griller for many years without realizing how much I was missing. Over the past year I have found out more and more by searching through the many websites on the subject. This site is really great!

    Because of a somewhat limited pocketbook I'm being slow to add to my equipment. Can't afford some of the high price items so will stay on the basic side equipment wise. I've been using a gas Weber Genesis Silver since 2005 for the convenience. Now, I'm thinking of looking for a used charcoal Weber kettle around here that I can clean up and spring for the SNS to make it more useful. I'm not a "bells and whistles" sort of guy so I'll be looking for solid basic equipment in general. I just bought a new thermopop instant read thermometer last week and have an older RediCheck for the grill.

    As soon as the weather warms up (which will be as soon as this storm passes) I'm going to do a deep clean on the old gas grill and start some experimenting. I was too nervous to try to grill the turkey for company the other day and will try it out for ourselves soon. I like the spatchcock technique and will try it also.

      Yep, it's about an hour east of Santa Fe at the southeastern base of the Sangre de Cristo mountains. Lots of cowboy history and much more further back.

    Welcome to the Pit, and the joy of BBQ. Your plan sounds like a great low budget plan. If you can afford a one touch silver 22" Weber kettle you will be good to go with a Slow N Sear. The only down sid is messy ash removal. For me charcoal is king.

      I used to have a weber kettle many years ago but didn't really know how to use it properly. Wish I had kept it around now :0

    Welcome tkt4 , Is the elevation tricky with grilling certain items. A place to check for equipment is craigslist. I search grill; charcoal; and smoker. Never no what might be put on.

      Not so far. Of course, I haven't done much more than the basics. Usually, altitude comes into play with certain kinds of baking or thickening sauces, etc. Boiling is around 199 degrees here.


      Thanks for the advice on Craig's List. I have been looking around locally and in the closest Craig's List in Santa Fe. So far the only kettle listed is about 3 hours away. I will keep looking.

    tkt4, Welcome to The Pit! I won't insult Your Weber Gas grill, but I will encourage you to find a Weber Charcoal Kettle Grill ASAP and a S 'n S shortly there after! You won't believe the difference in Your BBQ! I included a pic of my Thanksgiving Turkey cooked on a similar set up! In fairness I need to tell you the grill has a DigiQ DX2 Temp. Control. A 12.5 Lb. Stuffed Turkey took from 12:30 PM to 4:30 PM to cook. Bear in mind the Temp was +- 23* F

        Welcome, never knew there was a Las Vegas in NM. My wife is from Tucumcari so i've heard a lot about the area over the years. Always happy to read about some experiments!

          Welcome, tkt4. In my younger days I would escape the South Texas heat in the summer and head for the mountains in New Mexico and Colorado. I spent quite a bit of time in your neck of the woods hanging out around Pecos and in Alamitos Canyon, backpacking. It's a beautiful area.
