    I've cooked on a 18" Weber and my son has a 26" Weber, so I am familiar with them. You might check out Meatheads reverse sear set up. I really works well as does his smoking set up. The fuse or snake method works, also. Currently I cook on a Big Green Egg. Like you I love charcoal and have left gas and electric behind. Before my BGE I cooked on a water smoker similar to the Weber Smokey Mountain.

    18.5" WSM and a 22.5" Weber Kettle for the past few months. Before that it was an old Coleman electric smoker and Charbroil gas grill.

    I know you should never say never, but we're never going back to electric smoker or gas grill.
