I've cooked on a 18" Weber and my son has a 26" Weber, so I am familiar with them. You might check out Meatheads reverse sear set up. I really works well as does his smoking set up. The fuse or snake method works, also. Currently I cook on a Big Green Egg. Like you I love charcoal and have left gas and electric behind. Before my BGE I cooked on a water smoker similar to the Weber Smokey Mountain.
