    Hello from Chicagoland!

    Hi! Glad to finally join after getting so much great info here! I have always been into cooking and baking, but within the last few years I have stepped up my BBQ. I recently received a WSM and have been trying out new things when I can. I like doing a lot of research about different methods, so that I can understand the "how" and "why" and see what works best for me. The science/thinking behind the various cooking techniques, wood types, fat up vs fat down, and the like makes cooking more fun for me. I love a good challenge and, so far, have been very happy with my results. I like technology and gadgets and I'm currently working on building a wind screen for my grill and smoker so that I can do more year-round stuff in our harsh winters. Looking forward to learning a lot more on this site.
