Today is the long anticipated cook of one of the shoulders from the hog I slaughtered recently. I tried to go to bed early, missing all the Saturday night PBS music shows, but got sucked into an old film noir on TMC, lights out wasn't until just on 23:00. Best laid plans, eh? I set the alarm for 03:15 and got the meat on by 04:30. Now I'm catching up on 'Share the Music' and later will update the Farm Journal. KBQ is dialed in, I have three milk crates of apple wood at the ready.

Awesome start to the day. Love the chimney! It’s raining again in Alabama, but I preemptively moved the offset and Performer under cover and will be smoking 6 racks of ribs, 4 chickens and a dozen drumsticks this afternoon.
Well, this was not only long anticipated, it was long period....sixteen hours. I thought we'd be eating by the time the Dodger game started, no such luck. So we ate our salad and beans. Then I put the corn on top of the KBQ and ate that. Finally pulled the meat off as the Dodgers were finishing the Nationals. Shredded it up and put some on a plate with some Kinders BB! sauce. Pretty good for a first attempt, gave it a four out of five. Always room for improvement, eh?
They went into the house and were slathered with butter and topped with parmesan cheese.
