My insulated Klose does fine on this, but the KBQ needs a water pan and still doesn't impart the same level of smoke flavor. It appears that the KBQ fire is too clean even if only the top poppet is open. More experimenting is called for.
Update: Ran both poppets open until last hour. Result is beautiful ribs with great smoke ring, but not much smoke flavor. Next time (Monday), will only run with top (dirty smoke) poppet open. Absolutely worst case, I'll fire up the Klose. Got some killer St Louis spares that beg to be 'Qed.
