KBQ ~ has landed

    Earnest. I just finished readiing every this entire post for about the 20th time. You are without a doubt the KBQ expert. The pictures of your food are fantastic and have just about convinced me that I need to get a KBQ. A quick question for you. I know the KBQ requires tending compared to the WSM. But you also mention that food does seem to cook quicker in the KBQ. How does it compare to a WSM 18.5?

    For example, here is my experience with the WSM:
    Brisket (about 5 lb point and 5 lb flat) - 7-8 hours - 225.
    Baby Backs - 5 hours - 225.
    Pork Shoulder (2 5lb pieces) - 12-13 hours - 225.
    Chicken (6 breasts, 6 thighs, 6 legs) - 2-2.5 hours - 300-325.
    Sausages (Links and Fatties) - 2 hours - 225

    How do these cook times compare to the KBQ?

      jlazar I don't know about expert but I'm working on it.

      Flavorwise there's no comparison with any WSM. I'd go as far as I'd put it against any smoker out there and I'll come out on top.

      Cook times I'm yet to go over an hour at 325 on chicken. I actually overshot my first chicken. Checked it at 1 hour and breast was 170 degrees.
      I planned for 4 hours for the duck at 275 but at 2 hours I was already at 150. Had to Max out to brown it.
      I'm doing ribs at no higher than 215 degrees for 4 and half hours. Faster if hang.
      I did a fatty for hour and half, which is much thicker than links.
      I think the first brisket point was close to 6 pounds, had 2 in there. Started around 8:15 am at 225 and they went into the faux cambro at 2 am.

      I should mention that there's zero need to spritze in this thing.
      You can fill up the firebox and forget for an hour but I've noticed that doing that is just wasting wood.

      Ash box is big enough to take >12 hours of cooking.

                KBQ should hire Ernest and have him be their spokesman and photographer. I'm just sayin😎

                He's got me motivated to buy a KBQ... If I don't win one. Then there's David Parrish nudging me to buy a Kettle and SnS.

                I'm going to have to extend my patio and joint weight watchers.🙈
