My new Blaze grill arrives tomorrow. I don't want to pay half the cost of the grill to buy the insulated jacket Blaze sells for the grill. So I'm looking for ideas or advice about a DIY method to make sure the wood framing doesn't get too hot. Brick? Cement? Ceramic fiber insulation board?

You can use Hardi-board nailed to a wood frame. It's essentially a cement board so your cooker shouldn't hurt it. Fill the backside cavity with conventional blanket insulation and your good to go.
