Here's a little update after doing a test burn. The temp wouldn't hold steady even after closing everything off. It seems that there was air leaking in at the bottom pan. So, with that problem and, the concerns about the pan being galvanized I decided to make a pan out of sheet steel and seal it in with food grade hi-temp caulk. After that things worked out fine for the first ribs.
