                Decided to hang some ribs, all hang time no wrap and they turned out spectacular if I do say so myself.

                  CandySueQ not sure why but self basting sounds about right cause they sure seem to turn out better. Yes stock Bandera water pan, although I think misting would still help if no wrap.

                  Powersmoke_80, I'm glad to see the results hanging with indirect heat. Hanging in a drum is direct and the dripping juices gives a unique smoky flavor.

                  @ CandySueQ yes I know what you mean with drippings burning, I have done them in my UDS. This is with wood splits over pellets and gives me thin blue smoke at higher temps like 250.
