Water for cleaning, plain old vegetable oil for general use, and if I were doing something like fried rice I'd probably switch to peanut oil.

Water for the cleaning. I use grape seed oil as it has a high smoke point and keeps the smoke down. I use my griddle a lot in the man cave/garage so if the doors are closed it can get smokey in there. I know I will be using it a lot out there this winter so I'm actually going to install a hood vent. We are remodeling our kitchen starting next week so I'm going to see if the one we currently have in the kitchen can be vented outside. Right now it's not. Have to see if it can be when it gets tore out otherwise I will buy a new one.
