0000 steel wool will not harm the finish. I did my 14 year old Weber Genesis with it.

    Cool stuff.

My Performer needs a thorough cleaning as it gets a LOT of use.

I got this stuff called Krud Butter at ACE Hardware. It is non toxic and bio-degradable. I was astounded by the performance of this stuff. I am not 100 percent sure if it is food safe though.

For the grates, I wonder what would happen if you put them in a kitchen range, and turned on the cleaning cycle, which basically takes the oven to 800 degrees and incinerates everything to ash. Has anyone ever tried this?

Update: Well, seems my friend Google doesn't think this is such a good idea. Time to try something else.
